Mexican Salad

Ingredients

  • ✦ Romaine Lettuce or Mixed Greens
  • ✦ Black Beans
  • ✦ Corn Kernels
  • ✦ Cherry Tomatoes
  • ✦ Red Bell Pepper
  • ✦ Avocado
  • ✦ Jalapeno
  • ✦ Lime Juice
  • ✦ Cheese
  • ✦ Tortilla Chips
  • ✦ Salt & Pepper.

  1. Prepare the Vegetables

    • Wash and dry the lettuce or mixed greens using a salad spinner if available.
    • Chop or tear the greens into bite-sized pieces and place them in a large mixing bowl.
    • Dice the red bell pepper, halve the cherry tomatoes, thinly slice the red onion, and chop the cilantro. Add these to the mixing bowl along with the black beans and corn kernels.
    • Dice the avocado and add it to the bowl. If using, also add the sliced green onions, radishes, and jalapeno.
  2. Make the Dressing

    • In a small bowl or jar, combine the lime juice, olive oil, honey or agave nectar, ground cumin, salt, black pepper, and minced garlic if using.
    • Whisk or shake the dressing until well combined.
  3. Assemble the Salad

    • Pour the dressing over the salad ingredients in the mixing bowl.
    • Gently toss the salad using salad tongs or a large spoon to evenly coat the vegetables with the dressing.
  4. Serve

    • Transfer the salad to a serving bowl.
    • Sprinkle with cheese (cotija, feta, or shredded cheddar) and add tortilla strips or crushed tortilla chips on top for added crunch, if desired.
    • Serve immediately and enjoy your fresh and flavorful Mexican vegetable salad.
